Your current placing of the hen etc seems a reasonable compromise for now. i think we really need a separate article for Turkey (domesticated), like the equivalent for Chicken, since at the moment this is a mixture of a biological bit with a poultry bit. One day, when I get time... Jimfbleak.

This should only be a dictionary entry. As it is unsourced and unsubstantial, it isn't worth the whole merge procedure. It can simply get a mention in the lede of Poultry. This should just be a redirect to that article.
